Why this recipe works
Creamy ricotta + crisp toast is already a solid base, but the real magic is the contrast: fresh fig sweetness, bright citrus, and those little bursts of Sticky Balsamic Pearls. It’s a small-plate recipe that reads “restaurant” while still feeling relaxed and real—especially when it’s served a bit messy with extra balsamic drips on the board.
Ingredients
Makes 10–12 crostini (serves 4–6 as a snack)
- Baguette, sliced into 1.5 cm rounds (about 10–12 slices / ½-inch)
- Extra virgin olive oil, 15 mL (1 tbsp)
- Fresh ricotta, 250 g (1 cup)
- Greek yoghurt or thickened cream, 30 mL (2 tbsp)
- Honey, 15–30 mL (1–2 tbsp) (to taste)
- Lemon zest, 1 tsp
- Sea salt, 2 g (¼ tsp)
- Black pepper, to taste
- Fresh figs, 4–6 (quartered)
- Sticky Balsamic Pearls (Original or Premium Truffle Pearls for a darker, richer vibe), 120–180 g (½–¾ cup)
- Fresh thyme leaves or mint, 1–2 tsp
- Optional: toasted walnuts or pistachios, 30 g (¼ cup)
Instructions
- Toast the bread. Heat oven to 200°C (400°F). Brush baguette slices with olive oil and toast 6–8 minutes, flipping once, until golden and crisp at the edges. Cool slightly.
- Whip the ricotta. In a bowl, combine ricotta, yoghurt (or cream), honey, lemon zest, salt, and pepper. Whip with a spoon or whisk until fluffy and spreadable (about 30–60 seconds).
- Assemble. Spread a generous layer of whipped ricotta on each crostini. Top with fig quarters.
- Finish with Sticky Balsamic Pearls. Spoon Sticky Balsamic Pearls over the figs and ricotta. Let a little syrup land on the board/plate—this is one of those recipes that looks better when it’s not too perfect.
- Garnish and serve. Add thyme (or mint) and optional nuts. Serve immediately while the toast is crisp.
Tips (so it looks and tastes incredible)
- Make it ahead (without soggy toast): Whip the ricotta up to 24 hours ahead and refrigerate. Toast bread earlier in the day and store airtight. Assemble right before serving.
- Go intentionally “messy”: Spoon pearls last and don’t stress about drips—those balsamic smears make it feel like real entertaining food, not a studio shoot.
- Balance the sweetness: If figs are super ripe, use 1 tbsp honey; if they’re less sweet, go 2 tbsp.
- Texture upgrade: A sprinkle of toasted nuts adds crunch and makes the pearls pop even more.
Pairing Ideas (drinks + sides)
- Drinks: Prosecco, sparkling mineral water with lemon, or a crisp sauvignon blanc.
- Sides: Prosciutto, olives, roasted almonds, or a simple rocket/arugula salad with lemon and olive oil.
- Board idea: Add strawberries, dark chocolate shards, and extra Sticky Balsamic Pearls for a sweet-leaning grazing board.
Variations (sweet, savoury, gluten-free)
- Savoury version: Skip honey, add a pinch of flaky salt + extra black pepper, and use Premium Truffle Pearls.
- Dessert bite: Add shaved dark chocolate and crushed pistachios.
- Gluten-free: Use gluten-free baguette or crisp GF crackers.

Q4: What’s the best ricotta to use?
A fresh, creamy ricotta (not grainy) makes the biggest difference. If it’s a bit wet, drain briefly in a sieve.
