Ingredients
- 1/2 cup basmati rice, per person
- 1.5 L chicken stock, per person
- 1-1.5 pieces chicken thigh, per person
- 1/2 garlic clove, finely chopped per person
- 10g butter, per person
- Salt & Pepper
- 1/2 tbsp light soy sauce, per person
- 1/2 tbsp honey, per person
- 1/2 tbsp water, per person
- 20g tahini, per person
- 1 small tomato, chopped per person
- 1/4 cucumber, chopped per person
- Parsley, chopped
- Spring onion, chopped
- Sticky Balsamic Extra Virgin Olive Oil
- Sticky Balsamic Lemon Pearls
- Sticky Balsamic White
Directions
In a pan, heat the butter and cook the garlic until fragrant (1-2 minutes). Add the rice and stock. Bring to the boil with the lid on and then simmer for 12 minutes. After 12 minutes, take off the heat, fluff the rice and replace the lid for another 12 minutes for it to steam.
While the rice is cooking, season both sides of the chicken with salt and pepper and place on a hot, pre-heated griddle. Sear both sides and transfer to a flat-bottomed heated pan where you will complete cooking the chicken.
While the chicken and rice are cooking, prepare the salad. Add the tomato, cucumber, spring onion and parsley into a bowl. Add some salt & pepper to taste, and a dash of olive oil with a drizzle of Sticky Balsamic White.
In a separate bowl, add the tahini, light soy sauce, honey, and water. Mix, and set aside.
Once the chicken is cooked through, drizzle the tahini dressing over the chicken in the pan and cook for a minute or so.
Once the rice, chicken and salad are ready, plate up and add some Sticky Balsamic Lemon Pearls.
