This simple prawn pasta is a quick and easy dinner option that takes just 15 minutes to prepare. Featuring fresh prawns, vibrant asparagus, and a touch of Sticky Balsamic Lemon Pearls, this dish is both visually appealing and delicious, perfect for a weeknight meal.

Quick Prawn Pasta with Balsamic Lemon Pearls

Ingredients

  • 1 pack fettucini

  • 500 g prawn cutlets, (fresh or frozen. If frozen, defrost first)

  • 2 handfuls roughly chopped rocket

  • 2 large tablespoons food processed sundried tomatoes

  • 1 bunch asparagus, washed and chopped

  • 1 Lemon juice and zest from one lemon

  • 3 glugs Sticky Balsamic EVOO (Extra Virgin Olive Oil)

  • 2 cloves finely chopped garlic

  • 1/2 tsp chilli flakes, (optional)

  • Salt & Pepper, to taste

  • 1 small glass non-alcoholic white wine or stock

  • Sticky Balsamic Pearls

Directions

  1. Add some Sticky Balsamic EVOO and salt to boiling water, then add the fettucini and cook to your liking.

  2. While it is cooking, add 3 glugs of Sticky Balsamic EVOO to a pan and add the garlic, chilli and cook for a short while.

  3. Then add the asparagus and cook until it starts to colour.

  4. Add the prawns and lightly cook.

  5. Add the sundried tomatoes and non-alcoholic wine/stock and simmer for a minute or two.

  6. By now the pasta should be cooked. Drain it and place back in the pot.

  7. Add the prawns, the rocket, lemon juice, salt & pepper to taste.

  8. Mix well and plate up. Then add some lemon zest and Sticky Balsamic Pearls.

  9. Enjoy!
