Indulge in these elegant Sticky Balsamic Lobster Tails, featuring a rich caramelized glaze that perfectly complements the sweet, delicate lobster meat. Topped with zesty Sticky Balsamic Lemon Pearls, this dish offers a gourmet experience that's perfect for special occasions.

Ingredients
4 lobster tails (6-8 oz/170-225g each)
3 tbsp Sticky Balsamic Original
2 tbsp olive oil
2 cloves garlic, minced
1 tbsp butter, room temperature
1 jar Sticky Balsamic Lemon Pearls
Fresh thyme sprigs
Sea salt and cracked black pepper
Lemon wedges for serving
Microgreens for garnish (optional)
Directions
Preheat your oven to 425°F (220°C).
Using kitchen shears, cut through the top shell of each lobster tail lengthwise, stopping at the tail fin.
Gently pull the meat up and over the shell, keeping it attached at the base - this creates the classic "piggyback" presentation.
Pat the lobster meat dry and season lightly with salt and pepper.
In a small saucepan, combine Sticky Balsamic Original and minced garlic.
Simmer over medium heat for 2-3 minutes.
Remove from heat and whisk in butter until glossy.
Set aside half the glaze for serving.
Place lobster tails on a baking sheet lined with parchment paper.
Brush the exposed meat with olive oil, then generously coat with half the balsamic glaze.
Tuck fresh thyme sprigs around the lobster tails.
Bake for 12-15 minutes, or until the internal temperature reaches 145°F (63°C) and the meat is opaque.
For extra caramelization, broil for the last 2 minutes.
Remove from oven and brush with remaining glaze.
Carefully spoon Sticky Balsamic Lemon Pearls over each lobster tail - about 1 tsp (5ml) per tail.
Garnish with microgreens and serve immediately with lemon wedges.
