This delicious chia seed pudding is a perfect breakfast or snack option, combining creamy textures with fresh fruits and crunchy toppings. The optional maple syrup or honey adds a touch of sweetness, while the toasted coconut and pistachios provide delightful crunch and flavor.

Chia Seed Pudding with Berries and Coconut

Ingredients

  • 3 tbsp chia seeds

  • 3/4 cup milk of choice (dairy or plant-based)

  • 1 tsp maple syrup or honey, (optional)

  • Pinch of salt

  • 1/2 tsp vanilla extract, (optional)

  • 1/2 banana, sliced

  • Handful of blueberries

  • 12 tbsp toasted coconut flakes

  • 1 tbsp pistachios, roughly chopped

  • Honey, to drizzle

  • Sticky Balsamic Premium Quince Pearls

Directions

  1. In a jar or bowl, stir chia seeds with milk, salt, and vanilla/sweetener (if using). Rest for 5 minutes, then stir again to break up clumps.

  2. Refrigerate for at least 2 hours (overnight is best) until thick.

  3. Spoon into a bowl. Add banana, blueberries, coconut, and pistachios.

  4. Drizzle a little honey, then scatter Quince Balsamic Pearls right before serving. Let a little of the quince-balsamic liquid cling and dot naturally for a glossy, freshly-spooned look.
